"The most common mistakes are over-mixing and over baking," Almond Tree Cakes & Pastries Executive Chef Ibnu Pratama said.
According to Chef Ibnu, over-mixing can create rough texture. Meanwhile, over-baking can cause bad smell.
Besides that, the chocolate should be processed carefully. As an example, the chocolate should be cooked with low temperature.
"You could steam the chocolate using double boiling technique," he said.
